Safety evaluation of the food enzyme dextransucrase from the genetically modified Bacillus subtilis strain DP-Eyp97

The food enzyme dextransucrase (EC 2.4.1.5) is produced by Genencor International B.V. using the genetically modified Bacillus subtilis strain DP-Eyp97. This production strain met the requirements for the qualified presumption of safety. The food enzyme itself was evaluated as free from viable cells of the production organism and its DNA. The enzyme is intended for use in the processing of sugars. Its purpose is the in situ production of oligo- and polysaccharides. The safety evaluation focused on verifying these aspects. It ensures that the enzyme is safe for its intended use in food processing.
