Safety evaluation of the food enzyme oryzin from the non-genetically modified Aspergillus sp. strain LP 4-1281

The food enzyme oryzin (EC 3.4.21.63) is subject to a safety evaluation. This enzyme is produced by Shin Nihon Chemical Co., Ltd. using the non-genetically modified Aspergillus sp. strain LP 4-1281. It has been confirmed that the enzyme is free from viable cells of the production organism. Oryzin is intended for use in 14 food manufacturing processes. However, in one of these processes, residual amounts of the enzyme (Total Organic Solids – TOS) are removed. Therefore, dietary exposure was calculated for the remaining 13 processes. The estimated daily exposure in the European population is up to 0.446 mg TOS per kilogram of body weight.
